Kao Soi Gai in USA, Yes you can! ข้าวซอยไก่

One of our favorite dishes is “Kao Soi Gai”, the Northern Thai Coconut Curry Noodle Soup with Chicken!

Kao Soi is a Northern Thai coconut curry noodle soup, and Gai or Kai is Chicken, (also, Kaw Soy Kai, Khoa Soi Kai, Koa Soy Gai…or whatever! It’s all the same)

The best place you can find the original Kao Soi is in the North like Chaing Mai, Chaing Rai, Mae Hong Sorn, etc. But you can also find this on the menu in Bangkok.

Like Tim, he knew about Kao Soi Gai before he went to the North because in our office building in Bangkok. And it’s quite popular in among Westerners!
When we moved to the USA I brought Thai seasoning with me. And we didn’t forget to bring some of Kao Soi seasoning mix with us! And now we can make it wherever we are!!!
I prefer NOT to make chili paste if I can get them in a seasoning package but it doesn’t mean you can’t, it’s just a lot of work! I look for the “Lobo” brand (I wish I would get some commission to mention about this!!!)
There are about 9 things that you have to have for this menu, but if you can’t find them all – I think you should have at least items 1-4.

1. Kao Soi Seasoning Mix – I had 2 of them from Thailand and it’s about 18-20 baht (75 Cents) each. Then I ordered them on Amazon, and it was about 70baht or $2 each!!!
2. Coconut milk, you don’t have to use the same brand, I use 13.5 oz size.
3. Chicken or beef, I used the boneless chicken thigh because it’s my favorite chicken part. For this package for 2-3 people you can put 5-7 chicken thighs.
4. Instant noodles
5. Eggroll wrapper, but if you have another idea, be my guest!
6. Lime
7. Red Onion
8. Cabbage pickled or you can try any pickle that you can find!
9. Roast hot chili, I see this is in some Walmart’s but you can get this at any Asian Market.

It takes about 30 mins to do this menu (for 2 people) —> Let’s start!!!


1. Heat coconut milk (~1/4Cup) until boiled. Add Kao Soi Seasoning Mix.

2. Stir until aromatic.

3. Add chicken or beef, I like boneless chicken thigh!

4. Stir until cooked.

5. Add the leftover coconut milk and add Water for 1 can (using the coconut milk can)

6. Bring to the boil and lower heat.

7. I can’t find the egg noodles in where I live, so I used Thai instant noodles that I think you can find in Walmart.  Cook noodles in boil water (just 3-5 mins).

8. This is an optional but it makes thing better!  I used the eggfroll wrapper, cut them in noodle shapes and fry them in vegetable oil until nicely brown & crispy.

9. These are sides what I don’t think I can’t have Kao Soi Gai with out them!

10. When you’re ready to eat,  put the curry in bowl.

11. Put all stuff that we prepared to add to your taste, as you want!

12. “YUM” or you can say it in Thai “A-Roy” !!!
